Coriander
Omelette
(Difficulty: Very easy)
(Cooking time: 15 minutes)
If you
are used to conventional omelettes, this might taste a bit odd. If you don’t have duck or goose fat, butter
or olive oil can be used. But the duck
fat makes the flavor for this recipe.
Two eggs
2 tablespoons
chopped coriander
½
teaspoon cumin seeds
1
teaspoon duck or goose fat
Mix
chopped coriander into eggs. Heat the
duck fat in an omelette pan and add cumin seeds until golden. Then add egg liquid to make an omelette. Please do not overcook this. Proper omelettes
should be runny inside.
